“Honey, I think I like it when you roast the whole chicken better.”
I had to conciously close to my mouth to keep food from falling out. I know you just loved that image. Am I spoiling my husband with my new cooking adventures? I am not sure if this is a good thing or not! Ha!
Last night, I made roasted carrots, salad, and I baked boneless-skinless-chicken breasts in the oven coated with olive oil and Italian spices. Nothing fancy by any means…but…
He said it was good, but he liked the whole chicken better. The pressure is on. *grin*
I do have to comment about the rest of the meal. The roasted carrots recipe was really, really good. In fact, G even ate a whole piece of carrot and said it was “yummy.” To this mommy, that’s even better than if Wolfgang Puck himself had critiqued my meal. My child is as picky as they come and for him to eat something new that I made is better than the best review. Trust me, its a winner.
The night before that, we made Fetuccinni Alfredo – with a homemade Alfredo sauce that my friend Becky sent me (and she got it from her friend, Lisa). Oh my stars, it was fabulous. Beyond fabulous. Now, keep in mind that my realm of experience in Italian fare is not broad. I am not even Italian! My taste buds have only experienced Alfredo sauce from the likes of Olive Garden and the Ragu jar, or whatever else was buy-one-get-one-free at the grocery store that day. Regardless, this recipe was by far the best Alfredo sauce I have ever, ever tasted. I even stood at the stove and licked the pan after I put away the leftovers. I know, you liked that image, too.
I’ll be making it again very soon and I’ll take some pics to share with you, and see if I can get Becky’s permission to share it here if ya’ll are interested in a super-high-fat-but-out-of-this-world-delicious-Alfredo sauce recipe. It’s worth it to eat at least once then de-clog your arteries later.

I actually cannot wait to try the carrots recipe – looks awesome!! I’ve started cooking 2-3 times a night now too, and I LOVE it – actually look forward to cooking with fresh ingredients, not just warming up a pizza in the oven
